Holiday's Recipe


       November is here, and with it, the early Christmas spirit! I live in an island where Christmas is one of the most important and happiest holidays of the year. It is about festive music, sharing with your family, presents, and food, mainly food. Believe me, there is no Christmas in Puerto Rico without food. Last year I shared with you one of my mom's best recipe for this season. A delicious and easy pumpkin cheesecake you can check here. It promptly became popular so I decided I should share another one this year!

       This time I want to share with you one of the most exquisite and popular recipes in my country. We called it "Coquito" and it's a sweet beverage that you can enjoy as a dessert on this upcoming thanksgiving dinner. So, if you haven't decided a dessert yet or want to add a delicious, sweet, easy, and fast recipe, here I'm to your rescue. I hope you enjoy and spread some sweetness this holidays.


Ingredients



  • 1 can of coconut milk
  • 1 can of evaporated milk
  • 1 can of sweetened condensed milk 
  • 1 can of cream of coconut
  • 1 tsp of cinnamon 
  • 1 tbsp of vanilla

Instructions 

Mix all the ingredients in the blender, and once ready let it cool in the fridge for about two hours. Serve cool and add more cinnamon if you please.

Snickers Cookie in a Cup!

Since everybody loves delicious, easy, and super fast recipes this time I want to share with you one of my favorites. It's an Snickers Cookie in a cup/mug in less than 5 minutes! Let's begin: 

Ingredients: 



  • 1 Tablespoon of Butter
  • 1 Tablespoon of Granulated White Sugar
  • 3 Drops of Vanilla Extract 
  • Small Pinch of Kosher Salt 
  • 1 Egg Yolk (discard the egg white or save for differente recipe)
  • Scant ¼ of All Purpose Flour (slightly less than ¼ of a cup)
  • 2 Snicker Minis (You can also try it with your favorite kind of chocolate)

Instructions 

1. Start by melting your butter in the microwave. Butter should just be melted, not boiling.
2. Add sugars, vanilla and salt. Stir to combine.
3. Separate your egg (you can do so with a spoon) and add the yolk only to your cup. Stir to combine.


4. Add flour, then stir again. Measure a scant, slightly less than full, ¼ cup of all-purpose flour.
5. Smash the chocolate with your fingers, then add it to the mix, and give a final stir.



6. Cook in microwave 40-60 seconds, start checking for doneness at 40 seconds. Mine takes 60 seconds. Do not cook past one minute, just like a regular cookie, this will continue cooking as it cools. If the cookie is dry or cake like, try less time.
